I would not fear bird poop in...That is so adorable! I would not fear bird poop in my food. If I did, I could eat nowhere in my yard except in the blazing sun in a small space at the back of the house. The tree would not be acceptable for dining except for maybe a table for three. It would make me crazy trying to see around it. However, this would make a great place for writing. I would probably make it just because it is cool looking. It would make a great serving area if the ants did not find it. As for the tree growing, you could make extra boards to go into the area where the table could be joined instead or actually making it all so permanent. Making it not so snug would enable the tree to grow.
