AVOCADO AND EGGPLANT SANDWICH


SO...this is a sandwich we created with just a few ingredients we had at the farm.  We had an eggplant, an avocado, a tomato, a loaf of homemade wheat bread, and two eggs.  What to do, what to do?





We got out the cast iron skillet, sliced the eggplant, put a little bacon fat in the bottom and fried them up.  Not coated or anything, just cooked in the bacon fat with a little salt and pepper.





Then we fried up some farm fresh eggs (love those deep rich yolks) in the same pan.  We like ours over easy, but of course you could just fry them hard if you prefer them that way.  While the eggs were frying, I toasted four slices of bread.





I took the avocado and sliced it in half, spreading 1/4 of it on each slice of bread, using it as a spread of sorts.  Sprinkled a little salt and pepper on it as well.




Then came the layering.  We used once slice of eggplant on each side, for the top and  bottom, and then topped one half with a fried egg.




Lastly, we placed the tomatoes on top of the egg half and then carefully put the other side on top of the already made stack.

OK, now I know some people don't like the runny eggs (we love the creaminess that it imparts), so you might not like this picture BUT as I said, it can definitely be made with a fried egg and avoid all that.  The eggplant makes the sandwich a bit slippery, but if you mash it down a bit, it all comes together nicely.

We have decided to call it a "FARMWICH"™, ha.

It was delicious!!

  3. 1st Man,
    I love this sandwich, made from everything you raised or made at the farm. Now I probably would have to fry my egg over hard. So I don't see things running on my plate.

    The guys were at work, I was able to finally get the green zen machine out and cut the grass. I loved using it, just relaxing and driving along. It only took me 45 minutes to get everything we cut .....cut.
    You know if the guys were home, they won't let me on the machine........their machine hogs!!!

    1. Yeah, I understand, runny eggs aren't everyones cup of tea but heck, fried would be just as wonderful.

      Yay, you go to use it! Isn't it relaxing? It's work, I know, but it's just so peaceful and gives you time to think. I also like to look at the property and notice things I need to do, or maybe want to do, daydream, etc. Enjoy!!!!

    1. Hey, it's ok, I know not everyone likes every vegetable. Sadly, not ours, it was garden fresh, came from 2nd Family's garden. Delicious!

  5. I could not get past the eggplant. I don't mind runny eggs, just only on toast. All in all, that looks very nutritious, simple and delicious. What meal did you eat this?

    1. Ha, another 'no vote' for eggplant, LOL. It's ok, we understand. It was definitely simple, and definitely delicious. And would it be weird if I said this was our dinner? It was. We had some chips with it and it was just wonderful. :-)

  8. I would definitely try this without the eggplant or the avocado - maybe substitute lettuce for the avocado and bacon for the eggplant! The runny egg is awesome - I love being able to slop up the runny yolks with toast!

  9. I had to look at the photo to determine what an eggplant is - it's what we call in the UK an aubergine. So now I can build myself an awesome lunch/dinner with a few chips and enjoy! You've made me very hungry - I haven't eaten yet today. Off to the kitchen right this minute >> > > > > > >

  11. I'm one of those who doesn't care for runny eggs, but I can so see myself making this sandwich with an UNrunny egg! Gorgeous! And I always have homemade bread on hand.

  13. My grandmother, born at the turn of 19/20 century, desperately wanted to be seen as upper class. One of her bizarre notions was that the upper classes ate lightly boiled eggs. To her mind the more lightly boiled the higher you were on the social ladder. Thus we were forced to eat boiled eggs so lightly boiled the whites were still runny. Gag, gag, gag.
