TEXAS JALAPEÑO POPPERS RECIPE

This is one of our favorite snacks at the farm (and in town or wherever, ha).  We can't claim credit for this recipe because it's been around FOREVER, but I'm sure there are people who haven't seen it (or had it) so I thought I'd share.  They can be made on the grill, which is wonderful and probably best, but the oven does a nice job any time of year.  Really, they couldn't be any easier.  There isn't even much of a recipe, it's just however many jalapeños you want, one slice of bacon for each, and some cream cheese.


Take some jalapeño peppers, slice them in half lengthwise and then scoop out the seeds and ribs.  This is what makes them hot, so the more you get out, the less spicy they will be.  Next you simply fill them with softened cream cheese.


Now grab a slice of bacon, and wrap it around the cheese filled pepper.  Start at the stem end and wrap, overlapping a bit as you go, until you finish at the other end.  If the bacon is too long, just snip/cut it off and  shorten it a bit.


Place the wrapped peppers cheese side down, on a parchment lined cookie sheet.  Place into a preheated 425 degree oven.


Bake for 15-20 minutes until the bacon starts getting a bit brown around the edges. and remove them from the oven.  At this point, drain off the bacon fat that has collected at the bottom of the baking sheet.


Flip them over onto their "backs" and put them back into the oven for another 
15-20 minutes.



When the timer goes off, they should be browned and the cheese bubbling.  Remove them from the oven, place them on plates and serve!


Texas Jalapeño Poppers, bacon wrapped cheese stuff pepper goodness.  
This is what they look like just before eating...hot, soft creamy cheese, the wonderful smoky bacon and the slightly spicy bite of the jalapeño pepper.  

They are SO good.

    Hey sweetie, these are awesome!!!!!! My husband always cuts the tops off, removes the seeds, stuffs the jalapeno with cream cheese, wraps the bacon and uses a toothpick to hold the bacon on the pepper. And then we cook them on the grill. OMG...........talk about a piece of heaven. Enjoy!!!!

    1. Hmm, that's a neat way of doing it. I will have to try that sometime. Hey, this way, one pepper becomes two bacon wrapped goodies, LOL! They are good aren't they? Sigh...I did this last week and now I want some more, ha.

    1. Extra bacon??!?!? Never! It gets eaten as fast as we get it, ha. OK, I bought a pound and used used a few slices for these. The rest got eaten for breakfast and put into some green beans.

  4. My neighbor made those for a neighborhood bonfire. He used a cheese that he found that doesn't melt away he said. They were delicious. He's from NM and loves all things hot.

  5. In the last few months I have rediscovered jalapenos by having Subway put them on subs. I used to eat the plain poppers without bacon, but with bacon OMG. I will have to order lots of jalapeno seed this winter. They will be number two on my planting list next year. They are easy to can (Pickle) and with Bacon poppers OMG. Do you think they would freeze well after baking then you could just pop them in the microwave any time someone was over or just any time when you were alone?

    1. Yay for you! BACON + anything = good, ha. I've never pickled them but have heard of that. I have made jalapeño jelly and it was delicious. As for freezing, you know that's a very good question, I've never had any left over to try, ha. I might do that next time we make them, if you do it first let us know. Or if anyone else knows, feel free to chime in! I don't see why you couldn't, just not sure what the quality will be but it would be worth trying.

      I definitely want to plant some next year. They grow easily down here. And are versatile. I know there are all sorts of hot peppers but I think jalapeños are our favorites.
