CAPRESE SALAD ON A STICK RECIPE


This is one of our favorite snacks and it couldn't be easier.  A "Caprese Salad" is usually sliced tomatoes, sliced mozzarella and basil leaves. We just do the same thing on a wooden skewer. We get mozzarella balls, cherry tomatoes, basil leaves and olive oil mixed with seasonings.

We just slide on a mozzarella ball, a cherry tomato, a basil leaf, and then repeat.  It usually takes six total for the regular length wooden skewers you can buy at the store; three cheese and three tomatoes.  Then we take some good olive oil and stir it up with whatever seasoning blend we happen to have on hand (this was an Italian dressing seasoning blend from Penzey's) and drizzle it over everything.  We even add a few sprinkles of Balsamic to it on occasion.

It might seem like a lot of work, but it goes together just as fast as you could make the salad (maybe faster actually since there isn't any slicing involved). Best of all, no forks required!  It's like a salad popsicle!

    1. HUNDREDS?? I think my hands would be worn out, ha. We are going to try taking some to an event we are going to. Hopefully they will go over just as well.

  2. What a clever salad idea. I could even do this with my homemade mozzarella and homegrown tomatoes. Brilliant!

    1. Oh my definitely!!! I've got some cherry toms that I hope produce enough for these. And of course our own basil. Now you are ahead of me on the homemade mozzarella but that's on my 'things to learn list' someday.

  3. This is just flipping awesome! What a great way to have some really tasty travel food! I can see us sitting outside at one of the many wineries in our region, enjoying this with a nice Viognier and some chilled salmon this summer. Thanks so much for sharing your creativity!

    1. Oh sure, rub it in. Sitting outside a winery, sipping Viognier and eating salmon. I kid! It would be lovely for that.

  5. These look great and wish I had had this recipe before i went to the store ... i need to make a potluck dish and already have my ingredients for something else. Do people prefer some onion in their caprese? We used to always have a slice in there here and there... and somehow, even though we are onion eaters, I notice we are not doing that any more ... did people complain? I don't think so ... have we just gotten old and can't remember what to use? If that was the case, wouldn't we forget other things too some times? Curious to know what others think of onion in their caprese ... and putting this in my memory bank for sure!!! Good idea!!!

    1. Well we love onions so I don't think that's a problem and heck, wouldn't pearl onions be just great on this? I'm not sure though if I've ever had caprese with onions but I don't see why not? Thanks for the idea!!

  6. In reply to beachdaddy, I don't know what it is. So many things I've noticed have changed a bit over time. As for us, my whole family loves onions and our salads often have them in it, Caprese included. I say go for it!
