SOME BACON LOVE

There is no other reason for this post than...


...well bacon!

  1. An appetizer. Large green olives wrapped in bacon and fried. After removing from pan, roll in crushed cocktail peanuts. Delicious.

  3. New potatoes wrapped in bacon. I precook the potatoes then wrap with about 1/2 a slice of bacon, put a toothpick in to hold in place. Bake until bacon crispy. Made this way too many times in December but what a hit it was.

  4. Oh, I could go on and on about using bacon in recipes.
    Bacon is good with almost anything and everything.
    Here is an easy recipe that I make quite often and needless to say, they go quite fast at family gatherings, etc.
    Bacon Wrapped Smokies with Brown Sugar, Butter and maple syrup
    1 lb. bacon
    1 lb. pkg. smokie links
    1 stick(s) butter
    2 cup(s) brown sugar; divided
    Pure Maple Syrup ( I don't measure, I just pour; maybe about 1/4 cup worth )
    Preheat oven to 375F.
    Cut the bacon into thirds and wrap each smokie.
    Place all the wrapped smokies in a single layer in a baking dish.
    In small sauce pan, melt the stick of butter, add the 1 cup of brown sugar along with the maple syrup and stir until mixed well and heated through. Pour the mixture on the smokies and bacon.
    Then take the other cup of brown sugar and sprinkle evenly over the smokies.
    Bake for about 15-20 minutes and then turn the heat up to 400F for about 5 minutes or longer until the bacon becomes crispy.
    Tip: Lightly freezing the bacon makes it easy to cut neatly into thirds.
    Keep an eye on them and don’t overcook or the glaze could scorch. You could also turn the broiler on and do them a couple of minutes under it to finish the bacon tops.
    To the butter & brown sugar mixture you can also add 3/4 tsp ground cayenne pepper and / or 3 Tbsp (Dijon or classic yellow work equally as well)

    Shoot, I even add crispy, crumbled up bacon in my mac and cheese, fried potatoes. Making bacon wrapped tater tots with sharp cheddar cheese is also great and then there's the wonderful BLT sandwich toasted on whole wheat bread. Bacon wrapped hamburgers.
    Yup, I use bacon in so many different ways.

    1. I'm with Gail on this one. We actually BBQ our Jalapeno's stuffed with cream cheese, and wrapped with bacon.

  6. How abot some fried and crumbled bacon mixed with cream cheese and mayo to a "dip" consistency mix in a bit of green onion and mix well. Slice cherry tomatoes in half and drain. Stuff with the cream cheese mixture. You can sprinkle some shredded cheese on top. It is very good. BLT without bread.
