PIMENTO CHEESE SPREAD

Pimento cheese spread is one of my guilty pleasures.  For 2nd Man though, not so much.  He said it tastes like the middle of an olive, which in a way makes sense since the red thing in middle of a green olive is usually a pimento, ha!

For those in other parts of the country (or world) who haven't heard of it, it's a Southern staple for sure, a mixture cheddar, mayo, pimentos and other goodies.

Pimento Cheese Spread
I bought some this Thanksgiving and put in a bowl.  I think I ate most of it, I even put some on a slice of bread and ate it like a sandwich.

Price's Pimiento Cheese Spread
This is the brand I usually buy because it's good and is made with real cheese and all natural ingredients.  Honestly though, I've never made it from scratch, I just buy good tasting brands. That being said, maybe 2nd Man needs to have some homemade spread to realize how good it can be?

I know I can Google it of course but I'd like to try something that someone we know has tried and can give firsthand reviews of how good it might be.

Does anyone have a good recipe?

    1. Hey, nothing wrong with velveeta, we love it! Velveeta and rotel tomatoes is THE BOMB. I bet pimento cheese with that would be great!

  2. I would try the recipe from The Pioneer Woman(its on her website). It does NOT have what I would consider a typical Pimiento Cheese taste but it is good. Pimiento cheese haters like this one. Pimiento cheese is gaining popularity as I used to find it in stores(Price's is one of the brands I like) only in the south. Now days I find it here in western Colorado and recently in Utah and Nevada, not Price's though so I continue to make it occasionally.

    1. Thanks for that, I will check that out. Yes, Prices is what I settled on after trying several. It tastes the most "homemade" plus it doesn't have weird ingredients, ha. Thanks again!!

  3. I use 8 oz Kraft medium cheddar cheese, 4 oz jar diced pimiento--drained, and an egg-sized dollop of Miracle Whip, and 1/8 tsp salt. Grate the cheese, add salt and pimiento and mix. Add Miracle Whip to taste, more or less what I indicated. Stir well.

Store bought pimiento and cheese is nasty stuff!

It is easier to mix if you put the pimiento in first. But, you can dump it all in a bowl and mix at once.

If you hate MW, maybe you will use mayo.

I get a saucer and start eating it immediately, but if you let it sit in refrigerator for about an hour, it does taste better. It is much better if you make a sandwich and let it sit out on the counter for a bit. No, it won't kill you.

What do you mean you even ate it as a sandwich. THAT is how I always eat it. Well, unless I just start eating it with a spoon. I love this stuff. My mother put it in our lunches. That was over 60 years ago in the South.

    1. You are wonderful, thanks for sharing this info. Have to say though the Price's is really good but of course NOTHING beats homemade in the end, ha. 2nd Man said "a sandwich"?? I thought maybe it was weird, glad to know it's a regular thing, ha. And yes, I've been known to eat it straight out of the bowl with a spoon. ;-)

I made some a couple of weeks ago. I block of Extra Sharp cheddar cheese, a small jar of pimento (drained), a dollop of Dukes mayonaise, a block of softened cream cheese, onion powder, garlic powder, cayenne. Beat with electric mixer for at least two minutes. Best served on cheap white bread. YUM!

  9. Homemade is so easy and taste sooooo much better than store bought. The ones above are good. I grate a package of extra sharp cheddar, add the pimentos, and mix enough Dukes mayo to make it spreadable. You can add cayenne pepper or a little hot pepper sauce to taste too. I sometimes add a little pickle relish, chopped olives, or jalapeño relish. Try it, you will like it! :)

This is traditional pimento cheese and I make it all the time. You can gussie it up or leave it as is and still have something incredible,

  12. Recipe given to me by late friend back in the late 90's so it's been a few years since I made this.
This can be served as a spread on crackers or in a small cock pot and used as a dip for cut-up fresh veggies.

    1 t. finely chopped onion
    Few drops Hot sauce; optional
Chopped green olives; stuffed Or unstuffed, to taste; optional
In food processor, combine cheddar and Colby cheese and red pepper. Pulse to chop and combine.
With the motor still running, add small amount of salad dressing to make the mixture nice and smooth.

  15. I am obsessed with cheese dips. I love a good pimento cheese, but tried this variation and loved it! We even made it for our "take home gift" for our Christmas party this year.

    https://www.craftbeer.com/recipes/potted-beer-cheese

This beer cheese recipe is similar to pimento cheese or potted cheese and comes from Heartlandia: Heritage Recipes from Portland’s The Country Cat cookbook.
    Ingredients

1 pound sharp cheddar cheese, coarsely grated (about 4 cups)
1/4 large yellow onion, coarsely grated
    1/4 cup mayonnaise
    1/2 cup beer
1/4 cup olive juice (from a can of olives)
    4 dashes Tabasco sauce
Kosher salt and freshly ground black pepper
    Crackers, for serving

    Directions

To make this beer cheese, in the bowl of a stand mixer fitted with the paddle attachment, combine the cheese, onion, beer, mayonnaise, olive juice, Tabasco and salt and pepper to taste.
Mix on medium-low speed until soft and slightly creamy, about 5 minutes.
Transfer the Judy to an airtight container and refrigerate for at least 24 hours or up to 1 week. Bring Judy to room temperature before transferring to a serving bowl and digging in with crackers.
