SHEET PAN HONEY MUSTARD CHICKEN AND VEGETABLES RECIPE

We (well, me especially) like to cook meals on sheet pans.  It's so easy, almost always just one pan, easy to put together and easy to clean up.  Here is another one I recently tried:


These are the ingredients.  Pretty easy to pull together.  


Mix the olive oil, the juice of ONE lemon (reserve the other one), minced garlic, and mustard into a dressing/marinade.  Preheat oven to 425 degrees.


Cut the potatoes and the larger Brussels sprouts in half and scatter on the sheet pan in an even layer. Forgot to mention, you can cover the bottom of the pan with foil or spray non stick spray if you'd like, our pan is very nonstick and the olive oil in the dressing works to keep things from sticking. 


Spread them evenly on the pan and sprinkle with salt, pepper (to taste) and about half the dressing mixture.  Roast in the oven for 10 minutes to give the potatoes a head start at cooking. 


Remove from the oven add the chicken breasts.  Pour the rest of the dressing mixture over the chicken breasts and place back in the oven.


Roast for about 25 minutes or until chicken is done.  You want the potatoes to be fork tender and of course the chicken needs to be to safe temperature.


Dish it up and serve!  Very yummy and of course, easy clean up!

  3. Oh, I like this one! I’m grocery shopping today so I’ll look for Brussels.

    We have two cats: Molly Cat and Sophie Kitty. We also turn the heat down to 55 at night. In the morning, after scarfing down her food, Mooly car parks herself in front of the heat vent and toasts herself. Does yours do this too?

    1. Well, thankfully the apartment stays pretty consistent but at the house we sold a couple o years ago, the cats knew exactly where to sit after eating for the best and warmest spot where the heat came right out. They are smart for sure!

  4. Looks Absolutely wonderful but for hubby would have to change out the brussel spouts for something else; like asparagus.
    Sheet Pan meals - so easy peasy and makes for easy clean up.
    I do line my baking sheet with foil which makes for easier clean-up.

    1. Asparagus would work, so would broccoli. Sheet pan meals are so easy. We used to do foil until we found these amazing sheet pans. NOTHING sticks to them, I mean nothing. Not sure why but hey, we'll take it. 2nd Man's normal sheet pans we always cover with foil and parchment, they still look brand new after years of using. We like the heavy strength foil, it's wonderful. We use the parchment just so the food isn't stuck to the foil, ha.

  5. I finally made this, sort of. I had bone in chicken thighs, chunked up red potatoes and carrots. Very tasty!
