...make lemon pudding!
If you saw yesterday's post HERE, we had another small harvest of blueberries. Sadly though, not enough for a wonderful pie or even blueberry pancakes or muffins so 2nd Man said, what about lemon pudding?
Lemons and blueberries are made for each other.
We made the pudding and poured some into serving glasses and dropped in some of those wonderful frosty sapphires, er, blueberries!
We added some whipped cream on top of the berries and then topped that with the rest of the lemon pudding for a layered effect.
All that was left was to pop them in the fridge overnight to set up and just before serving, topped them with some more whipped cream and, of course, the last of the blueberries.
It was a quick and easy way to use our small blueberry harvest and literally enjoy the 'fruits of our labor', ha.
And it was so good!

Do you know those glasses are from something we bought at the store, like one of those yogurts they have now that come in glass jars. We saved them because we liked the size and shape (nice for portion control). Roam through the yogurt section in the grocery store and there are some cool shapes for glass jars. No screw on lids (they all have the foil, tear off kind) but great for things like this. You get to eat what's in it and then wash it and keep it for future use. We have a set of eight of these. And we love the Oui yogurt they have so I have saved about three dozen of those for future crafting (votive candles perhaps?)

DeleteI think it is so special to enjoy eating food (especially dessert) from ingredients that come from your personal garden. Looks great and I bet it tastes fabulous!

DeleteI took lemon curd I made to a party to eat on chocolate pound cake I made. When I looked around, everyone with a piece of the blueberry pie had lemon curd on top. Since i had never tried blueberries and lemon, I was surprised. In the 30 years since, I am a believer. That is a pretty presentation.
ReplyDeleteWow, what a great idea, lemon curd on top of blueberry pie! We'll have to remember that. And yep, it's two of those flavors that go together perfectly, like chocolate and peanut butter ha.
