GOOD FOOD AND HOBART SUNDAY CHRISTMAS EDITION

 This is from Christmas...our dinner and of course, some Hobart.


2nd Man is in a whole new cooking mode, we're getting all sorts of good stuff and he's taking our favorites and remaking them with no salt and using heart healthy ingredients.  For Christmas dinner we had pan seared salmon over a salad of wild greens and arugula, homemade multigrain wheat bread croutons and drizzled with a balsamic reduction...


...and for dessert, it was dark fruits (plums and purple grapes, dark fruits are heart healthy) drizzled with a bit of agave nectar.  SO GOOD.


Hobart had a good Christmas of course, with his own present to open.

  1. Have never had salmon but I must say; 2nd Man your salmon along with that salad sure does look appealing.
    Have always thought about trying salmon but was afraid that I may not like it and I'm not one to waste food and letting it go to waste. Hubby has had, it but he really didn't care for it.
    Hobart sure is guarding his new toys. Santa was good to him as always.

  2. I had scallops and sugar pea pods for my NYE lunch with friend, Mary, at a local Chinese restaurant! Plus I have good leftovers! I don't much care for salmon, stinks up my apartment and the entire hallway!
    Hopefully, you will get sufficient sodium naturally ... our bodies do require some sodium, so you may want to do a little research on that.

  3. I'm a salmon lover. When I lived in the Pacific Northwest, the salmon often had skin on it. I learned to line my metal steamer with iceberg lettuce leaves before steaming the salmon. Made cleaning the steam easy and no flavor change to the salmon.

  4. I have never cooked salmon but it is fine. I really like canned salmon on a salad, in croquettes, or just plain. Yours looks prettier, though. I do not miss salt at all because I have about two dozen spices to use.

  5. I do not do fish but I have a ton of easy chicken dishes. The easiest is probably chicken with salsa. There’s something about (I believe) the vinegar in the salsa that makes the chicken super tender. Just put whatever portion of chicken that you like in a baking dish. Cover with salsa and then cover the dish with foil. Bake until done. I usually serve this with white or cilantro rice. A veggie on the side or a salad. Easy peasy. Since I can my own salsa, this is one of my standard back up dishes. I just thought that you could probably mix in black beans, drained and rinsed to remove excess salt, somewhere. More fiber and heart healthy 😉

  9. A bit of history.
    I do remember this date well cause in 1962 was the first year the Rose Bowl Parade and football game was shown in color. Remembering some of the neighbors coming over to watch the parade in color for the 1st time. Wasn't the best of color but in color just the same.
    After that, more and more programs where shown in color
