Another week has flown by and it's still hot here. Come on Fall, we are ready and waiting! This heat is slowing down packing up the house.
The other night, we had roasted chicken. We took the leftover meat off the bones and the next day, 2nd Man made this...
He mixed it with some frozen veggies and used a low fat cream of chicken soup and seasonings and added in 2% shredded mozzarella and topped it with mashed potatoes (brushed with olive oil instead of butter).
It was a wonderful chicken pot pie/shepherd's pie fusion. It's so good. With a nice salad to start, we ate on it for three days.

I was working on laundry and tossed some towels on the floor to add to the laundry basket. Then Hobart found them and curled up to sleep. I delayed washing those items for a few days so we didn't disturb his new favorite sleeping spot until he was done using it. Because...

ReplyDeleteThat roast chicken will already have lots of flavour ! I will add a touch of Cornish Salt'nPeppery . I won't add anything else .It sounds perfect as is for me ....oooh yumm..... but maybe you might mix in a pinch of Italian herbs and a sprinkle of Parmesan on top should you so desire ! 😍

ReplyDeleteThis looks delicious, did 2nd man brown the top under the broiler? Shepherd's pie is a cool weather favourite here so I must try this version. Thanksgiving this weekend here in Canada so lots of left over turkey to use up.
