SWISS CHICKEN RECIPE


Here is a new dish we cooked and we really enjoyed it.


Preheat oven to 350 degrees

Lightly grease the bottom of a 9x13 baking dish (we use the butter wrapper)
1 stick of butter, melted (we didn't say it was healthy!)
2 cups stuffing mix (without the seasoning)
6 boneless skinless chicken breasts
6 slices of deli ham
6 slices of Swiss cheese
1 can of cream of mushroom soup (if the breasts are big we use 2 cans)
1/4 cup milk
1/4 cup sherry (optional but delicious)





Place the breasts in the baking dish and sprinkle some salt and pepper to taste.





Next, place a slice of ham on top of each breast.





On top of the chicken and ham, lay a slice of Swiss cheese.




Mix the cream of chicken soup with the milk and, if using it, the sherry.  Pour over the top.


Lastly, mix the melted butter with the stuffing mix and the sprinkle on top of the chicken mixture.  Cover with aluminum foil and place in preheated 350 degree oven.
Bake for 45 minutes, covered...



...then remove the foil and bake for 15 minutes more or until the chicken is fully cooked and the topping is golden and browned.  

Serve and enjoy!

  3. You've inspired me and I want to modify this a little bit and try it in a slow cooker. The crunchy stuffing won't work but maybe pecans or something green from the garden. In this weather I'm being thrifty with my energy!

  5. Sounds a lot like chicken cordon bleu which is a chicken breast wrapped around ham and cheese. Do you think it would work without the soup mix and a little less butter?

  9. Wow, that looks fantastic and it's not every 7 am yet but I'd eat that for breakfast LOL. Very easy too, I'm gonna have to try it.

    Wanted to mention too, that you share the greatest vintage posters. Also didn't know that about mesquite beans. Wish we still lived in Texas.

  10. Dang, that looks scrumptious.
    I try and avoid canned soups, but some of the best comfort food is made with them [tuna casserole anyone?] But I like to make my own "gravy" - so this will be a cinch to duplicate with homemade ingredients.
    And, hey, butter in anything is always a good thing. :) Especially if it is unsalted - and it's a hecka' a lot more healthy than margarine.
    But if people are squeed out about all the butter in the stuffing, just use chicken broth instead. Healthier [again, low sodium or homemade] it will work just as well, the top will still be crunchy - just don't make it too moist. :)
