ROASTED PORK LOIN OVER POTATOES

Here is a quick and easy meal that we have often and we love it.  We love pork loins roasted in the oven.  We also love potatoes in all forms.  We have made pork loin with mashed potatoes, but this one is made with potatoes that roast with the loin at the same time.


First we slice up some potatoes (we used fingerling) and some sweet potatoes cut to the same general size and shape.  Then we drizzle all of it with a bit of olive oil.


On top of that we place a pork loin rubbed with olive oil and sprinkled, simply, with salt and pepper. 


Roast at 400 degrees for about 40 minutes or until an instant read thermometer reads 165 degrees on an internal temperature. The potatoes should have a nice color to them after this time as well.

Let the loin sit for about 10 minutes before slicing so that the juices stay inside.  Serve sliced on a plate with the roasted potatoes.

  2. That looks great. I made eggplant parmigiana this week from a Cooking Light recipe. Hoping that I have a good harvest of eggplant so that I can make it again from eggplant in the garden.

  3. Looks good but I wonder where are your other vegetables? With all that you're growing you must be eating your zucchini or eggplants. Can't always be meat and potatoes.

    1. LOL! Yep, pics of those are coming soon. Zucchini is being shredded for future use (we've had a bummer of a crop with that). Then we have the eggplant which has been mostly eaten with your yummy recipe, ha. Tomatoes have been in sauce with pasta, jalapeƱos we freeze and just toss in various dishes, cukes are all pickles *I've made about 5 batches of those microwave bread and butters, ha, or given away a lot too.

  4. That looks delicious. Your ac must be colder than mine because I will not use my oven in the summer. YUM! I have a pork loin in the freezer. Now, I want to turn on the oven and cook it!

    1. We have an 'energy plan' from our provider that has free weekends. So 2nd Man bakes a lot on the weekend and we can keep the a/c down. At the farm, we try not to bake much because it will get hot, even with the window units but they REALLY suck up the electricity, ha.

  5. deelish! and we love roasted veggies - don't care what kind - except for aubergine (eggplant). we can't stand that! but rub any good organic veg (hopefully that you grew yourself) with some good and proper EVOO, salt and pepper, and then our usual suspects - cayenne, turmeric and cumin and that's a meal in itself. your meal, again, looks deevine!

    1. Oh we are loving turmeric, just got into that in the last six months or so, it's so good and adds such flavor (and color!). No eggplant? Oh how we love eggplant. By the way, you'd think with a name like "aubergine" it would taste better? LOL! Love to you!
