2nd Man sent this picture while I was at the farm yesterday...I drove back as fast as I could, LOL.

He made his wonderful meatloaf. It's loaded with veggies, carrots, onions, celery, mushrooms, and then breadcrumbs, some Italian sausage combined with ground beef. Oh, and topped with bacon! It's so good.
Also, as you can see, we do like we always say, if we're going to heat up the oven to cook one, we'll make two and slice one up for later freezer meals.

Here is a slice, served with a side of broccolini he chopped up and mixed with corn and sautéed them together. It was a great meal, definitely comfort food. And bonus, meatloaf sandwiches today!

Hobart was relocated, per his request, to the table with his afghan. It's a special treat from time to time. He's too "senior" to jump all the way up so we pull a chair out and he can make it in two jumps. We know exactly when he wants this as he will look at us and then back up at the table and then back at us. Because...

Not only does that meatloaf meal look look scrumptious, but Hobart is looking mighty alert for this picture and happy!

ReplyDeleteY’all are such good parents to your sweet senior Hobart – you’re making each day of his life so happy. When my senior cat could no longer jump onto my bed, I got him some steps – I still treasure hearing his little footsteps and then seeing his ears peek above the bed as he climbed up to be with me.
Thanks it was very good. And yes, we have a set of steps at the end of the bed too. We always say 'click click click' when we hear him coming up and down, ha. That's what we say, he's older and there aren't many things he "asks for" but let's make it a happy one when he does. We've always done that with our cats and they've lived good long lives. I think they know, don't they?

ReplyDeleteHe probably does but he doesn't like it. Never much of a people food eater. Which is good, more for us, ha ha. Meatloaf is so good.

ReplyDeleteBacon adds a great element, the flavor melts into the meatloaf and adds a great "extra" when you bite into it.
DeleteNever put so many different veggies in meatloaf. I usually stick to onions, peppers, celery, and an egg to bind the breadcrumbs. May have to try this with ground turkey.
ReplyDeleteHe uses a little hand pull chopper to get them pretty fine. The mushrooms and onions and carrots and celery just kind of blend in (the carrots, due to their color, do stand out of course). It's really good. Oh and when we remember we'll add some peppers too if we have them on hand.
DeleteI was going to make meatloaf today, and I just did--ground beef, oatmeal, can of spaghetti sauce, onions, bell pepper, salt and pepper. I was going to use tomato sauce but could not, so use a can of spaghetti sauce. Years ago, I used lots of catsup in meatloaf and crushed saltines. I figure oats are healthier and so is plain tomato sauce.

Well yours sounds delish!! Bell pepper is good in it too. He uses dried bread crumbs but crackers have been known to be in there instead. You know spaghetti sauce would be a nice flavor as well. We might have to try that.

ReplyDeleteHubby just mentioned the other day about wanting a meatloaf.
Have never made mine with mushrooms in it but I do add Italian Bread Crumbs, finely diced celery, finely grated carrots, diced bell pepper, along with grated onion; giving bits of onion, along with the onion juice to give more of onion flavor and I do add 1 egg to may mixture;(if making small batch) I also do a bacon basket weave and cover with my own homemade BBQ sauce.
Few minutes before getting out of the oven, I put it under the broiler for a couple of minutes or so.
I pretty much make my meatballs the same way. Making 1 large mixture all at once; about 1/2 for meatballs and other 1/2 for meatloaf.

The mushrooms he dices up really small and they kind of act like "more meat" and they have the same meat color (once cooked) so you kind of just make the meat go further in a way ha. Yep we broil the same way at the end.
DeleteDoes 2nd Man have an actual recipe for that meatloaf? I absolutely LOVE meatloaf but haven't been able to replicate my mom's. This one looks amazing!
