It's Sunday again!
How does the week fly by so fast?
A couple weekends ago, we decided to have fish tacos and wanted to reinvent them as healthy. 2nd Man made some corn tortillas instead of flour, the corn tortilla has no fat/lard and he uses minimal salt. Then we took our mahi-mahi and cut it into chunks and lightly coated them with only whole wheat flour and pepper and then pan seared them in avocado oil spray. I made more pickled onions, he made pico de Gallo, and we shredded some cabbage. It was fish and all veggies and I made a healthy fish taco sauce (2nd Man said it was the best) to top it off.
SO good!
I was trying to do laundry and Hobart was helping. Apparently he thought he "pressing the sheets" before washing or something. Of course, I delayed the laundry while he slept. Because...

Even though I don't personally know you two fellas, it seems you so perfectly complement each other! Your blog is just so pleasant to read, unlike others I have read!

Awww, that's a very kind comment. Yep, what you see if what you get, haha! Yes, Hobart got a few little pieces of flaked fish and he was happy. Very happy. :-)

LOL! You are very kind, we will keep track of what we make, who knows what the future holds! :-). And yep, Hobart said ironing was appropriate before washing and it will be.

ReplyDeleteIt originated in Baja CA Mexico, usually deep fried pieces of flaky mild fish and then just shredded veggies and a sauce. I've never been a big fishy person but I loved these, ha.
