Here is something we regularly throw together for a quick meal. It's only three ingredients but a wonderful combination of flavors.
Take some large sweet potatoes and slice in half lengthwise. Put them on a foil lined baking sheet (they'll mess up an unlined pan while baking). Roast in the oven at 400 degrees for about 20 to 25 minutes, or until fork tender.
We make it easy by using a precooked rotisserie chicken available in the grocery store. Just shred the chicken and put it in a pan on the stovetop.
Add enough BBQ sauce to your liking. We used about 2/3 of an average size bottle of good sauce. KCMasterpiece makes an all natural sauce we love...no high fructose corn syrup, just good old fashioned sugar. Heat until bubbling.

Place your roasted sweet potatoes cut side up on a plate, fluff the potato a bit with a fork, top with several spoonfuls of the BBQ chicken mixture and sprinkle on a few chopped green onions. That's all, it's ready to eat! The BBQ chicken combines well with the flavor of the sweet potato and we had ours with a green salad on the side.

Thanks for the info on the KCMasterpiece BBQ sauce. I just threw out everything in the kitchen that had high fructose syrup in it. I also threw out a bottle of organic BBQ sauce that was not fit to eat! I figured I was going to have to start making my own. Will give the KC a try! Th recipe looks good and easy!

DeleteYou must use a particular KC Masterpiece one, since their main BBQ sauce contains HFCS. I can't eat tomatoes, so I can't eat BBQ sauce, but my husband's favorite is Stubb's which has the lowest sugar of any sauce we've seen. No HFCS, and tastes really good. Or at least so he says. I can't eat it. I make my own sauce for pulled chicken which includes red palm oil, fish sauce, and plums. I know it sounds weird, but it tastes really good. And life wouldn't be the same without a good pulled chicken sandwich. Hmm or maybe some in a sweet potato. I've never tried that.

DeleteSounds really good. I'd probably make it with the leftovers from the roasted store bought chicken. There's usually plenty of meat on there for the two of us. I like Baby Rays BBQ sauce.

DeleteBarbecue sauce without HFCS? I think I'm in love... most of the time I make my own but sometimes I'm not up to it. Both the sauce and the recipe would be perfect for those times, and yummy to boot!

DeleteWe used to carry foil covered baked sweet potatoes to keep our hands warm in colder weather. They served as a great snack later.
