HOMEMADE PASTA AND PESTO DINNER

Pasta drying on rack

2nd Man took some flour, olive oil and some farm fresh eggs from 2nd Family and worked his magic with them to come up with a rack full of pasta, like the one sold here: Marcato Atlas Pasta Drying Rack.
Then he used his mixer pasta attachment and turned it into fettuccine.

We had some basil in a large pot by the back door, and he pureed that up with some olive oil, nuts, garlic and Parmesan cheese and made pesto sauce.

It was very simple after that.  We just boiled the pasta, drained it, tossed in some pesto and put it into a couple of bowls. Then we poured some extra pesto sauce on top, added some fresh grated Parmesan and cracked black pepper and we were good to go.

Mmm, it was a yummy dinner!

One of my favorite dinners. Last year I had a bumper crop of basil, so I made lots of pesto and froze it so we could have a bit of summer in the winter.

Doesn't that look delicious! That along with some ripe garden tomatoes would be my idea of a feast. Is it dinner time yet???

This looks sooo delicious... fresh, homemade... hey, is 2nd man a chef? We should try our hand at homemade pesto. I don't know why we don't. This dinner is an inspiration.

It's really so very easy. Heck he cuts it by hand most of the time, you don't even need a machine. Try it! I'll have some pics soon of his hand process (he does it on the counter). Thanks!!

You know, we've never had enough basil left over, we seem to use it up as it grows, but that's because we currently have it growing in clay pots instead of in the ground. I hope next year we have a bumper crop. I didn't know you could freeze it so easily. Cool!

Ha, I got the attachments for him as Christmas gifts (or was it one for birthday and one for Christmas?) Anyway, it was the best gift. I get that for him, he's excited and then I get to eat homemade pasta, LOL!

I'm assuming you have a Kitchenaid? Yes, definitely get them when you can, they are great, especially for the unusual shapes.

I knew what you meant. Yes it was delicious (and gone in about 10 minutes, LOL!).

I'll have a posting about the rack, I got your question about it, and Shannan below and a few direct emails. Thanks!!!

Ha, he thinks he is sometimes! :-)

I am lucky, the other night he said "anytime you want fresh pasta, just say so, I enjoy making it". Um, YEAH!

I'll have a post about the rack this weekend. Thanks for stopping by!!!

Oh he makes that too (it's one of my favorite dishes). Yes, this is so easy (well at least watching someone else make it, haha). It's just a basic pesto recipe and it blends well into the fresh pasta. Pretty vegetarian too ('cept the eggs in the pasta of course), but meatless is ok sometimes and just as filling. Thanks!!!

Love + Love = Love, right? Ha. Stop licking that screen it can't be good for the computer, hahaha.

Thank you for the kind words.

Oh, if we had had them we would have put them in. Tomatoes aren't ripe yet, and we got some from 2nd Family last weekend but they were gone quickly, ha.

hey, it's always dinner time somewhere, right??

Awww, thanks, I will pass the comment along to him. No, he isn't a chef, he's just a self taught home cook that loves to do it.

Yes, pesto is very easy, next time he does it, I'll run in there and take some pictures, ha.

Thanks again, you're very sweet.

Thank you! It was delicious. I could eat like that every day. I must have been Italian in a former life, ha.
