GOOD FOOD AND HOBART SUNDAY

 As many of you read yesterday, we are having BBQ ribs and coleslaw and potato salad today.

This meal is from yesterday.

Chicken tikka masala and rice

2nd Man made chicken tikka masala and rice.  He starts with a store bought sauce that we love and mixes it with cubes of sautéed chicken and peppers, coconut milk, and more spices and seasonings.  It's then served with rice and topped with with a few more diced peppers and some green onions.

Meanwhile, Hobart spent the day recharging in the sun because he's solar powered and of course...

    1. We wondered when you'd ask, ha. Things are happening, in fact we have two posts ready to go, depending on how this all plays out. Contractors have not been easy to get and/or to get info from (being rural creates some problems) but we have a couple now and we have to decide if we want to go one direction or the other.

    1. Well thank you for that comment, we appreciate it. The sauce we get is from Kroger (grocery store chain) they have a Private Selections brand that is their own brand I guess and they have all these simmer sauces of different types. We LOVE their Tikka Masala sauce. He doesn't do much extra. He sautés some chicken (use breast tenders cut up into pieces) and then sautés in some chopped mini bell peppers (the ones in orange and red and yellow) and then adds the sauce, coconut milk (unsweetened just the kind from the can, not cream just the unsweetened milk) and whatever other seasonings he decides ones sometimes just some curry powder for heat or maybe a tbsp of garam masala or vindaloo seasoning. Not necessary but they add a little extra layer of flavor. Get it bubbling and hot and dish up over rice. Next time we make it, I'll take some proper pictures and make a post.

  3. I have never had chicken tikka masala but your picture has inspired me to look for the sauce and spices. Mmm!
    Hobart should be full of pep and energy from all the solar power he’s absorbed from these hot, sunny days.

    1. See above reply, yep super easy and I know you have a Kroger nearby for sure. We've tried other brands of Tikka Masala sauce but their private selection one is so good. Plus it's all natural no weird extra things in it. Hobart is loving the sunshine for sure, ha.
