GOOD CINCO DE MAYO FOOD AND HOBART SUNDAY

It's been a wet weekend.  Yesterday was good for a bit, went to the farm but way too wet from the rains earlier in the week to do anything outside in the yard.  Then last night and through this morning, very heavy rains and storms.  It's slowly moving out and no rain for the next week at least.

Today is Cinco de Mayo and I told 2nd Man we should have some good Tex Mex food.

So, he made his revised heart healthy arroz con pollo.  Oven roasted chicken, removed from the bone and cooked with tomato sauce, diced tomatoes, brown rice, jalapeños, onions, and seasonings (low sodium) and slow cooked together for about 45 minutes.  I made a black bean and corn salad and he made some corn tortillas.  Topped with a little greek yogurt, yummy!

Hobart is lying around, enjoying the sunshine when it pops through the window.  Because...

  2. Not much rain in my area - just half an inch. It’s terrible that some of the areas north of Houston are getting such bad flooding.
    What a delicious looking Cinco de Mayo meal y’all had! I just had some leftover red beans and rice - delicious also but not up to the level of yours!

    1. We had beans and rice the other night! Love it. Yes, North areas are experience Harvey levels of flooding. Ready for it to stop for sure.

    1. Thank you, it was delicious and pretty healthy. We also only had that one plate each, we'll have the leftovers tomorrow.

  4. I think you said you had lost weight. Has second man lost weight? That is a pretty picture of Hobart and his fluff.

    1. Somehow, I lose weight easier but yes, I'm down almost 20 lbs since my "incident", ha, and 2nd man is down about 10 lbs. I've sort of leveled off, but still working on it.

      And yep, Hobart is fluffy for sure! We brush him every couple of days. He loves it. :-)

  5. There was an article in the paper about the heavy rains in your neck of the woods. Glad to hear everything ok at the farm. Good for you losing that weight.
