PUFF PASTRY PEACH DESSERT

A few weeks back, we posted about our peach harvest and our ongoing (at the time) blueberry harvest.  We used them both in different ways but here is something we tried that was so good.

It's sort of the latest viral cooking trend, TikTok, YouTube, etc.  Literally only three ingredients (four if you count BOTH fruits).  It's using puff pastry to make an upside down savory or sweet treat.

Ingredients:

One sheet of puff pastry, thawed, cut into rectangles
Drizzles of honey
A few sliced peaches (and we added blueberries)


Line your baking sheet or you'll have a sticky mess for sure, ha.  Pour some honey in the spots where you will put the fruit.


Lay the sliced peaches on top of the honey, in about the size of the squares of puff pastry.  I also sprinkled some blueberries on top but forgot to get a picture of that.


 The size I cut them to worked great for six pastries.  Cover the fruit with the square and I used a fork to press down the edges.  Not the prettiest job on a couple but hey, we just say it's "rustic".


Brush the tops with an egg wash (one egg yolk with a little cream).  You could even sprinkle sugar but keep in mind, you're looking at what will be the bottom.


Pop in the oven at 350 degrees and bake for 20 minutes or until the puff pastry is golden and puffed up.  The box of puff pastry will give suggested time and temperature as well.


I sprinkled some powdered sugar on top.  These deflated a bit while I was getting them ready for the picture.  They are best right out of the oven when hot and fluffy.  On the viral videos, they also make these savory, with onions and cheese for example, under the puff pastry.  You can also use just about any fruit.  Honey is optional.  There are even ones with apples and  maple syrup.  Yum!

Definitely a good way to use up the fresh fruit from our trees and bushes!

  2. I am going to try this. If you dampen the pastry where it is pressed with a fork, it will adhere better and leak less, just like you dampen the edge of a pie crust.

  3. This looks so simple and so delicious! Mmm! Your peach and blueberry combination is beautiful! I’m putting puff pastry on my grocery list.
    The savory version would make a great grab-n-go breakfast item - Bacon, egg, and cheese….Ham and cheese….Egg, potato, onion….
