GOOD FOOD AND HOBART SUNDAY

It's the weekend, 4th of July weekend though the 4th is on Tuesday so no fireworks until then.  But it's time for some good food and Hobart.

First the good food.  As this posts, I'll be working on our traditional 4th of July weekend meal, BBQ ribs and homemade coleslaw but it's not ready yet...


...we wanted to make a quick lunch the other day so we looked around to see what we had on hand.  We had some fresh croissants (from a bakery, 2nd Man has not attempted those...YET, ha).  We also had some leftover marinara sauce, sliced cheese and some frozen fully cooked meatballs.  Boom...sliced the croissants in half, thawed the meatballs in the microwave, put some marinara on the bottom, four meatballs on that, a little more marinara and a slice of cheese.  Pop under the broiler and about 5 minutes later, lunch was ready, ha.

And it was good!


Hobart, still sleeping in the sunshine.  Of course this is right in front of the door blocking our access to the balcony most of the day.  But it's OK because...

*UPDATE: WEATHER DELAY, SIGH*

Today is a big NASCAR race...the 4th of July Weekend is always a big race (usually the Coca Cola 500) but this year, for the first time in NASCAR history, it's a street course race through the waterfront streets of Chicago.  Watched the practice and qualifying yesterday but today will be crazy fun to watch.  If you don't normally watch NASCAR because going around and around in an oval is boring, this would be a fun one to watch.

    1. We like to "cook without recipes" which is usually what we post on the good food sunday meals because they are just things we throw together, always hope it inspires someone else to not be afraid and just put some things together and enjoy, ha. Thank you!!

  2. The food looks delicious. Tommy often goes in the refrigerator and finds food I have cooked and combines it how he likes. He puts meat, cheese, and other things in a wrap and is happy. I wish I could sleep as well as Hobart. We watched reruns of Young Sheldon today, lots of them. But, we turned the tv often to see Nascar. It certainly was different than the track.

    1. You know, he's not wrong, you can kind of put meat cheese and anything else into a wrap it's always good, ha. Young Sheldon is so fun, we loved Big Bang Theory and enjoy YS as well. It was a different race for sure. Glad the weather cleared.

  3. Yum! When I make meatballs (I bake them), I usually make a double batch. I use half ground beef and half spicy poultry sausage plus the usual egg, etc. Half gets eaten and half goes in the freezer with a couple in small bags for meatball subs. When I get a baguette at a good price, I cut it into four and freeze those too. As you know 😋, it’s a great back up meal.

    1. Yes, we love making a big batch and freezing some.They work great for things like this, though more often we toss them with some sauce and pasta, ha. I didn't know baguettes would freeze well, will have to look into that. Thanks!!
