Here is a quickie breakfast that we just love. I'm not sure what it's even called, but we call it tomato poached eggs on toast.
First we have some toasted bread. Of course homemade is always best. And yes, the recipe is coming soon. I finally got him to record it to paper when he made this loaf. I'll post it soon.
Then we make a tomato sauce using a can of fire roasted diced tomatoes, some tomato sauce, herbs, scallions and garlic. Really it's just whatever type of tomato based sauce you like. Once the sauce is heated, thick and bubbling, crack some eggs into it (don't stir!) cover the pan, and let them poach in the sauce.
Once they are poached to your preference (we like ours pretty firm), just put an egg on the toast and spoon some of the sauce over both.

Lastly, we sprinkle some Parmesan cheese on top, top it with a little dried parsley (or oregano) and it is good to go.
And boy is it delicious!

Sounds really interesting. I never thought about poaching an egg in sauce before. May just have to try that. One of my favorite egg dishes is to make a cheesy white sauce and then slice hardboiled eggs into it and serve it over toast.

I know what you mean about your own tomato sauce, my other half makes a sauace with whatever we find in the pantry, usually some tomato sauce, some diced tomatoes like you used (though I may have to look for fire roasted) and we pop a few cherry tomatoes in if we have them. Some garlic, onions, seasonings. It's never the same twice, ha. I love the idea of poaching eggs in it. And I love anything over toast, ha. Thanks for sharing. I'm a new blog follower and I love it. ReplyDeleteWell first of all, WELCOME! Thanks for the nice comment. Yep, that's exactly what we do. It's usually pretty much the same but it can vary a bit. An easier way of describing it would be maybe like a quick marinara. Tomatoes, maybe a bit of sauce, some herbs, garlic, simmer till thick and then just drop the eggs in, put the lid on and let it simmer. Delicious!

DeleteAn even easier version ... slice fresh tomatoes kind of thick ... but less than 1/2 inch. fry in olive oil a few minutes, turn and crack eggs over them ... sprinkle with red pepper flakes, season salt and pepper. Put just a little water in lid, dump into pan, and clap the cover on. Cook till eggs done to your desires .... put sliced cheese on the toast, then the tomatoes and eggs ... yum!! Best if JUST a little sort in the yolk so it makes sauce for the whole shebang... One of my fave breakfasts when there are good tomatoes to slice!!

DeleteI eat my eggs with salsa or ketchup (I know, I know alot of people think it gross) so I am sure I will love this!
ReplyDeleteNot gross at all, I LOVE ketchup on my eggs. 2nd Man thinks it's weird but hey, it's how I grew up. I have had salsa on them too. But I like the ketchup the best. :-)

Yep, you can cook to however you like them, just drop them in the sauce and cover and they will poach, you can tell when they are hard, just a few minutes, and then take them out and pour some sauce over the top. Enjoy!!!
