STORMY WEATHER AND CHICKEN SOUP

Stormy weather and so far, nothing too severe (despite this picture!).

2nd Man, even though not feeling well himself, decided to make us some of his famous (in our house anyway, LOL) homemade chicken soup.


Chunks of chicken breast for the white meat, some thigh meat for the rich dark meat, heirloom carrots (yellow, purple and orange), small potatoes (red/white/purple), onions, garlic, parsley and...

...it was all cooked in rich, homemade chicken stock (he uses more veggies, wings and a pressure cooker to make that).  That's really all I know, other than it's SO good.  And on a cool, rainy, feeling sick kind of day, it is spot on perfect.

Tomorrow is supposed to be beautiful so I'll head to the farm to check things out for the first time in almost two weeks, hopefully we remain creature free and all will be good out there.  But for now, I'm curled up on the couch with one of the cats, full tummy, feeling much better.

    1. It was very good! And you're right, it's very colorful, never thought about it (probably too busy eating it, ha). This was (and still is) good couch curl up weather. Tomorrow should be pretty!

  3. Here's hoping 2nd Man is feeling better! It is so true that chicken soup really helps. It's a must to keep on hand at our house but I have to say that those photos are inspiring for a new recipe!

    1. He kept the chunks big cause I like it like that but really it's jus carrots and potatoes and onions. Oh and the garlic almost cooks away. Everything else is just for seasoning. But it is so yummy! Thanks!!!

    1. LOL! Can you CAN chicken soup? I never thought about that. Maybe that takes a pressure canner or something? I never thought about it. Thanks for the subtle, cough, hint. LOL!!!!!!

    Chicken soup, the best type of soup to have when one doesn't feel well.

  10. You could can the chicken and then can the vegetables in another jar. That way you would not need to process the vegetables so long. But, you can can chicken soup. I would consult Ball or ugs site just to make sure of your times. It does look good. Everything looks good to me, but I have not had water for a month and am not capable of doing all the washing of dishes, heating and carrying water, so I just don't cook.
