OVEN ROASTED SUMMER SQUASH WITH CHEESE RECIPE

While we didn't grow zucchini this season, we did grow yellow squash and had several coming in each week.  2nd Man asked me to buy a couple of zucchini and he was going to make something for us.  


He sliced up both the yellow squash and the zucchini.  He put them on a sheet pan, overlapping each other.  Drizzle with olive oil and salt and pepper.  Lastly he sprinkled it all over with shredded cheese (this was a mozzarella/cheddar blend).  


Roast in the oven at 375 degrees for about 20 minutes or until the squash is soft and the cheese is starting to brown and get bubbly.  


Dish it up and serve!  It's SO simple and quick but also hearty enough to be a meal itself it you were so inclined.  Of course, it does make a wonderful side dish of vegetables with steak or chicken.

We've had it several times now.

    I have made baked zucchini fries but I just may have to try this someday. Thank you both. (buy you a Copper Chef baking sheet for Very Easy clean up; no soaking, scraping required) I absolutely love my Copper Chef cookware and bakeware items. I especially love my 2pc. chopper chef copper crisper.
    (right now I'm saving up to get me the Gotham Air Fryer.)

    That darn land shark. Shame on him for eating your fruit.
