CAPRESE CRACKERS, TOMATOES BASIL AND MOZZARELLA


Remember weekend before last when we had this harvest (see above) with some not quite ripe tomatoes?  Per several suggestions, we put them in the window ledge at the apartment and by Friday...

...this is what those same four tomatoes looked like!  They were the most beautiful red color, even more vibrant than we see in the store!

We needed to use them fast so...


...I sliced a couple of them up, along with some fresh basil from our garden, and some mozzarella...

...and stacked them on water crackers, drizzled it all with olive oil and a nice, sweet, balsamic vinegar.  

They were SO good.

We each had a plate (with a few extra for seconds) and it made for a nice dinner, actually very filling.

    Thinking to self; 'I wonder how it would be to put them under the broiler for just a bit till the cheese melts slightly'

  3. Great looking dinner! I never thought of serving this on crackers, will try it. I currently have 8 large ones on the window sill and more green ones on the plants. I see lots of caprese and blt's and tomato spaghetti in our near future. I do freeze the little grape and cherry ones for "fresh" tomato and garlic sauce in the "winter".

    1. It was kind of a random thought and it was so good. We used those "Carr Water Crackers". They are good size, round and so the ingredients fit nicely. ha. And we love BLT's. Mmmm. Thanks for the info!

  5. THAT LOOKS DELICIOUS! Love it and so fresh from the garden. If you made cheese and 2nd Man made crackers that whole meal could be homemade, ha. Becca
