Yesterday was working in the garden day. It was gray and overcast but cool. I got a lot done. More on that in tomorrow's post. But I also had to clean out the garden and that meant harvesting the last of what we were growing from Fall.

Here are the heads of cabbage. Varying sizes. Since this is the first time we've grown these, anyone have any suggestions for both storage and how to use? That smallest one is about the size of a softball.

And the last of the collard greens. We usually eat this sautéed with bacon and onions. SO delicious!
Today is a rainy day, so not much outside I can do. Tomorrow it is opposed to rain all day.

DeleteSlice thin and saute with onions to serve alongside eggs for breakfast. Make sauerkraut, either bottle fermented or longer term crock fermenting. Delicious and so good for you. Make a big batch of cabbage rolls, with the big leaves wrapped around a hamburger and rice mixture, bake in a big pan and eat some, freeze the rest for another dinner. It's great in stir fry. Do you have a cool dry space to use as a root cellar? Cabbage will last a long time that way. Good luck, that's a beautiful crop.
ReplyDeleteOOH I love cabbage rolls. Need to look for a good recipe. Great idea to free zoom. Not sure where we could keep it like that. Nothing here is "dry", ha, Houston is humid all the time. Thank you for the kind words!! It's our first attempt and not so bad, albeit a bit small, ha.
DeleteYou can make cabbage rolls in the slow cooker and they freeze great.

Use in Stir-fry; chicken and noodle or slaw and mushrooms piled on top of cooked rice
stuffed cabbage rolls
Make yourself a cabbage coleslaw and Sriracha sauce and put on top of sliced pork tenderloin or hamburger sandwich
put in soup of stew
Make up a batch of Freezer cole slaw
Or you can just freeze or can the cabbage
You have some great ideas too. I LOVE coleslaw. Will definitely have to make some of that.
Deletemake cabbage roll soup with tomatoe sauce, hamburger, rice, slivers of cabbage, make sure to add handfulls of sauerkraut and any spices that you like. it's like having a cabbage roll without all the fuss of the roll! as for storage - we keep ours in a box covered with a towel in our crappy basement which is quite dark. make sure to cover them and find a cool closet to keep them in. hope this helps.

DeleteI saw a recipe for cabbage roll casserole that promised not to disappoint. If you eat cole slaw, you can freeze cole slaw.

ReplyDeleteI have kept cabbage well on the bottom shelf in the back of my refrigerator. One simple way I love cabbage is to stir fry it with bacon and onions. My grandma used to make this for lunch for herself and grandpa. Sometimes she would add some cut up cooked potatoes. Sometimes I add some matchstix carrots, some celery, garlic, some purple cabbage for color, and shallots from my garden. Good, simple, and colorful!
