HOT OVERGROWN AND GOOD EATS WEEKEND UPDATE

It's a hot weekend.  Ugh.  The garden is done and so am I, ha.  I went out yesterday, early in the morning (was there by 8am).


I mowed and then watered the fruit trees and plants on the porch. I also moved some things to the barn.  But that was it. I was done.  


I contemplated trimming the Vitex (Texas "lilac") because they seem to be in a competition to see which one can take over the stairs first.  But again, it was just so hot and by this time it was about noon and I was running out of energy.

They'll still be there  when the weather cools down.  We can duck, ha.


When I got home, 2nd Man was making this.  He took cubes of chicken breast, coated them in seasoned flour and sautéed them. Then he added milk, water and a little chicken broth to make a gravy and simmered it all until thickened and the chicken is fully cooked.  Then serve it over/alongside some mashed potatoes.

Super easy and super good!

Farm Shark
Of course, mowing was not without its dangers.  Farm Shark was spotted again!  I had to mow around him/her several times.

Something tells us there won't be any more sightings until this time next year.

  1. That chicken dish looks wonderful.
    I trim my Vitex (dead heading) right after blooming and then in the Fall or early Spring I trim the lower branches so that it forms more into a tree shape instead of a bush.
    Some varieties can get quite tall; up to 15 feet or more unless you get the dwarf kind
    I would dodge that speed bump there if I where you or that farm shark could bit a nice size hole in your tires. :}

    1. It was yummy and so easy. I did some Spring pruning and have just sort of ignored it and now it's just growing by leaps and bounds. Will need to do some heavy pruning this Fall. Not sure if it's too late to get a tree shape, ha. Yep, that "speed bump" was scary, HA!

    1. I asked 2nd Man and he said it's just chicken and gravy. We had about 3lbs of chicken breast cut up into cubes. He rolled in seasoned flour. Then started sautéing it in a little olive oil until it started to brown. Then he poured in water, milk and chicken broth to make a gravy. He said each batch is just is different. This was about 2 1/2 cups water, 1 cup milk and maybe 1/2 cup chicken broth. Then just turn to low, cover, and simmer for about 15 minutes, stirring occasionally, until it starts to thicken. The flour and oil sort of make this happen. Then he made some mashed potatoes and just served the chicken over it.

      Next time he makes it I'll get exact measurements, ha.

  4. honestly, our weather isn't much better here. the humidity is awful. we were supposed to get a cool day today but it was hot and humid when i woke up and that was very early. i hate this summer!
