SLOW COOKER POT ROAST RECIPE

2nd Man loves when I make this.  Of course, I don't have to do much at all and it gives him a day off from the kitchen as well, ha.  

It's a slow cooker (or crockpot as it's also called).  


I try to make it as easy as possible.  I get a 4lb chuck roast because it has lots of connective tissue that melts over the long cooking process and makes for tender meat.  I season it with salt, pepper, and garlic powder.  You could really use whatever flavors you like at this point.


 Then to make it even easier, I use a 16oz bag of baby carrots...


And a bag of small potatoes, this was a variety of round potatoes but we use fingerling at other times as well.  The small size is great because I don't have to cut them up first.


Here is a great way to speed things up for the morning of prep.  The night before, I put some sliced mushrooms and onions in a bag.  There is also some parsley in here because we had some on hand.  Again, this is all to taste, more onions if you like them, less if you don't. 


I put the roast in first.  Some recipes call for browning it first in a skillet and that does work but we enjoy it just as much without doing that.  Then the potatoes go on top of that (I put things in the order of what takes longer to cook)...  


Carrots on top of that...


Onion and mushroom mixture on top of carrots...


And I didn't get a picture of the measuring cup but this is simply 1 cup of beef broth mixed with 2 TBSP of Worcestershire sauce. 

You can add other seasonings to taste, some people mix it with a packet of onion soup mix, others use Italian seasoning. We find the onions, salt and pepper, garlic powder, broth and Worcestershire sauce add plenty of flavor.


Pop the lid on, set it on low and 8 hours later...


We come home to this!

It's so good, so easy and best of all, after working all day, it's nice to just have it done and not have to worry about "what's for dinner".

  1. Looks Delicious and don't you just love them liners for easy clean up?
    Pretty much the way I make mine only without the mushrooms and I do add 1 can of Cream of mushroom Soup over the top of everything and not adding the beef or vegetable broth.
    Sometimes I will add a can of Ro-Tel (mild); basically using what I happen to have on hand at the time.

  2. Looks scrumptious and that's pretty much how I do my roast in a crock pot. But your photo has me realizing I don't have a roast handy, so it's off to the store I go and I will follow your recipe. I like the idea of the sliced mushrooms and onions. I have everything on had except the roast... The idea of cream of mushroom soup sounds great.

  3. I brown the roast first. Same veggies but I add red wine, a couple sprigs of rosemary and three whole cloves.

  4. Yum! I used to brown the roast first, but over time noticed we liked it just fine when I plunked it in the crockpot without that step, so I never brown it anymore. I am like Jimmy with the red wine, but I go the thyme route instead.

  5. Delicious! I LOVE my slow cooker!!! I use it quite often. I'd have to say our favourite stew is Coq Au Vin. I made it two days ago. But I do brown everything first then toss it in for 7 hours loaded with red wine. It's so delicious and the house smells like heaven all day.

    I never saw that plastic stuff you use, I'm guessing for easier clean up?

    1. We don't use it often enough but Im going to start. It's so easy and to come home to a hot meal with nothing else to do is wonderful. Another vote for red wine!! I feel like we're missing out, ha.

  6. The liners got a hole in them, sort of messing up the idea of less mess. I have not cooked beef in a few years, but I used reduced steak, getting the same results for less cost. I would buy steaks when on sale, then use several, just stacked in the crockpot. I use potatoes and carrots but do cut them up instead of buying the ones you used. Lots of celery, onions, salt and pepper are my seasonings. I have found the whole carrots are so much tastier than the ones cut like you used. Yes, I know they are called baby carrots. But, they are not. Boneless, skinless chicken breasts are really enhanced using the same method and vegetables. Your dish looks delicious.

    1. Well this was made about three weeks ago before we had carrots but that's a good idea. If we don't eat them all just because, ha. I think we've just snacked on them every time we see them in the bag (we're keeping them in some of those green bags that keep them fresh longer). Maybe it's time for a roast again. Thank you!

  9. Willy Dunne Wooters and I love a roast cooked in the crock pot, but I can't add veggies because he won't eat mixed food. When we get chicken noodle soup from Panera, he takes out the carrots and puts them in my bowl. I don't get it. The carrots taste the same as the chicken and the noodles.

  10. I don't brown mine first. I toss the meat into the crockpot with either a BBQ or teriyake or sesame ginger marinade; spouse wraps up a whole onion in foil and puts that in. cook for 8 hours and the house smells FABU!

  11. That looks sooo delicious! 1st Man, you have great cooking talents, too! I like your shortcuts and make ahead ideas.
    I make mine basically the same way as you, just in the oven since I don't have a crock pot anymore. This was my favorite Sunday dinner as a kid. We always made gravy from the drippings and a big pot of rice to go with it. It became a one-word dish for me: roast-rice-and-gravy.

    1. Aren't they though? So easy for a quick dinner. Well, quick in the sense it cooks all day but you don't have to do anything else, ha. Post tomorrow on the liners since so many asked. Grocery store find.
