GOOD FOOD AND HOBART SUNDAY

 You probably saw yesterday's post, crazy weather. Today is beautiful.  Time for some good food.

This was our Christmas Day dinner.

Since we had had turkey at Thanksgiving, we decided to do a Christmas chicken, ha.  We bought a good sized chicken, did the same turkey dry brining process in the refrigerator for a few days ahead of time and then we chose a few different veggies.  Here, we used onions, new potatoes, parsnips, and butternut squash.

We roasted it all for about an hour and fifteen minutes at 400 degrees (until chicken was at the proper temperature).  Skin removed and then we had a salad and added roasted Brussels sprouts and 2nd Man's delicious dressing.  We ate it for three days.


Hobart got some of the skin and some pieces of chicken.  He was happy.  And then he crashed on the rug in the living room.  And we had to step around him, which we did.  Because...

  1. What a beautiful and delicious meal! A feast for the eyes and then the tummy.
    And roasted Brussels sprouts! Yum! Roasted vegetables are so tasty. I roasted some broccoli and cauliflower a couple of days ago and they were so good. I’m impatiently waiting for my Brussels sprouts to mature.
    Looks like Hobart really enjoyed his part of your meal. It was so good he had to lay down on the rug afterwards. BTW, that is a gorgeous rug - I love the colors and the designs on it!

    1. Thanks, it was very "fall like" (winter? ha) and yes we love roasted veggies like this. I didn't know we could grow Brussels here? Hmmm, we LOVE them and I might just need to figure that out in our Fall garden. Thanks, the rug is actually an indoor/outdoor rug we found on a shopping channel. We LOVE it, it's just the right style, pop of color and if it gets dirty, we can literally take it outside and hose it down, ha. It's so durable. We're going to use this one on the covered porch under the table and chairs there and get another style/color for inside. :-)

  2. I love a meal that lasts three days. It looks delicious. Once I put ground sage on chicken, it has an aura of turkey and Thanksgiving. That is a pretty rug.

    1. Thank you and thank you! We like that idea of some sage, will remember that next time. Sage is one of those herbs that is so connected to thanksgiving, we love it.
