I don't have step by step photos but we have the recipe! This is 2nd Man's favorite blueberry muffin recipe. He tweaks it on occasion but here is the basic.
He made a batch for me to take to work.
They are golden on the outside...
...and fluffy and moist on the inside.
Ingredients:
6 Tbsp unsalted butter
1 Tbsp baking powder
`1 tsp kosher salt
3 cups all purpose flour
1 1/4 cups sugar
1 whole egg plus 2 egg yolks
1 cup milk
2 tsp vanilla extract
2 cups fresh or frozen blueberries
Steps:
Preheat oven to 375. Grease and flour a muffin tin or use paper liners as he did here.
Mix flour, sugar and baking powder in a bowl.
In another bowl, using mixer on medium speed, cream together butter and sugar until fluffy. Add eggs and vanilla and continue beating. Then reduce speed to low and add flour mixture alternating with milk until all incorporated. Then gently fold in blueberries. You want them to remain as whole as possible.
Divide batter evenly among muffin cups. Sprinkle generously with granulated sugar and bake for 30 minutes, rotating halfway through.

DeleteI never see so many blueberries in muffins. The papers make them appear so "old worldly".
ReplyDeleteHe likes a lot in them ha. And he loves those papers. They are only about 50 cents more per package than the large cupcake liners. Definitely worth it for the cool look.
