TOTAL ECLIPSE 2024

Texas, indeed all the states along the path of totality, is in full blown eclipse-mania!


Here is the path, for those of you in the line, please comment after it happens and let us know your experience.  It should be fun.  We've had a few partial eclipses and while neither Houston nor the farm, will be in the path of totality, the farm will be at 95.7%.


Here is what it would look like at the exact location of the farm and below are our particulars:


In Houston, both of us will be at work when it happens, it will be at 94.06% of totality.  So, not much difference between here and 45 miles closer to the path.

Seems kind of obvious but you know there will be cars lined up along the shoulder anyway.


But we have our glasses ready, I'll try from work, 2nd Man will try from the apartment.  2nd Family is going to try to get some outdoor pics when it happens, would be cool to see how dark it gets out there at the farm, though the weather may not cooperate for those of us around the area.

GOOD FOOD AND HOBART SUNDAY

 Another week and time for some good food and some sleepy Hobart.

We posted Monday about our Easter dinner, you may have seen one pic.  2nd Man made some lean pork loin with Herbs de Provence, mashed garlic sweet potatoes and garden peas.  It was so good, but since we're all about portion control (this was all we had, one plate each), there were some leftovers.

So the next day, he diced up the remaining pork and mixed it with the peas with and some greek yogurt, kefir and seasonings (to make a sort of "cream of soup"), put it in a pan, topped it with the leftover mashed sweet potatoes and baked it until bubbly...

...and voila!  Shepherd's Pie, our way!  It was SO good!  We had a nice salad on the side and were able to eat on this for two more days!

Shh!  Hobart is sleeping today.

A GIFT AND A REMINDER

2nd Man bought me a gift after my cardiologist visit.  We both agreed not to exchange birthday presents since we were heading to the Le Creuset Factory to Table event and knew we would spend some money.  We're sure you saw THAT post, ha.

But he wanted me to have a little something as a surprise after my doctor visit the other day...

...and he found this great watering hose sprayer.  It's designed to be like a firehose nozzle (and of course we had to have green to match our hoses, ha).

It's adjustable from a soft cascade to a super jet for power washing.  We figured that could come in handy at some point down the road for cleaning something on the house, washing cars or even watering a tree from a distance, ha.

HEART HEALTH UPDATE

Well...for those wondering, here it is: cardiologist appointment was yesterday and...

...it was good news all around!

No blood draw, he likes to do that at either 6 months or the year anniversary (unless I say I’m having issues or they see something).

They took my blood pressure, 105/78 which they said was spot on perfect.

Then they did an EKG to see damage and said he could see where I had the heart attack (it changes the rhythm), but added that it also showed there was very minimal damage, and my heart did an excellent job of healing.  He drew on a piece of paper to show me how mine was and what a severely damaged heart would show and yeah, huge difference.  When I went in that morning, they said they had a limited amount of time to save my heart from major damage and they succeeded!

According to the notes on my file, with everything he could see and my interview questions asking if and me saying I have had zero problems or concerns, I was doing 100% perfectly.  

He said my stents are the 18th generation, I found out he was actually one of the first surgeons in Houston to ever put in a stent and that they have improved so much.  I have the latest and it is infused with a drug that prevents scar tissue from forming.  According to him, there is no reason I can’t go ten or fifteen years without having to think about them.  He just wants me to get through the first year and then he’ll decide which medications to stay on.

I asked what my max heartrate should be when doing physical activity or yardwork, he said 140ish was fine.  I’ve been getting it around 135 if I’m doing a lot of work outside, so that’s good.  He said if it gets higher, just take a break on the porch and relax for a bit.  No problem there!

I’ve lost 16 lbs since December 7th (when it happened).  He said our change in diet and lifestyle has helped and I was a model patient and wished all his patients could be like this, ha.  He said some just refuse to change anything and some don't want to take medications.  I have things to do in this life, there is no time to mess around with my health!

THE GOOD THE BAD AND THE UGLY

Well, sometimes it's a mixed bag...

THE GOOD:

Finally seeing some wildflowers this season, this is across the street from the farm.  2nd Man said he wants us to designate some wildflower areas in the future because it's just SO pretty!

THE BAD:

'Tis the season for a snakeskin in the middle of the bedroom floor.  Sigh.  I looked around and didn't see anything but honestly, I didn't look TOO hard because, well, who wants to come face to face with a snake in their house?  Not this heart patient!


THE UGLY:

More wild/feral hog damage!  They are staying more toward the front of the property, so it's a few acres away from the house and orchard/front yard.  2nd Family's dogs bark when they see something in our front yard so hopefully that is keeping the hogs elsewhere.  However, I do have to admit, I was a little nervous mowing the trails because I wasn't sure if I'd round a bend and come face to face with a family of them...they can be very aggressive.

EASTER FUN FINDS AND GOOD FOOD

Here is our Easter basket for two!

With our new dietary life, we limit chocolate but the cardiac nutritionist said really dark chocolate does have health benefits, and of course, moderation is key.  So, we allow ourselves one small piece on occasion.  This will keep us for a while.  The golden eggs I found a few weeks ago, one has dark chocolate bars (varying flavors) and the other has a bag of Jelly Belly jelly beans for me (along with those gummy bunnies).

2nd Man got this for me...it's a silicone mold for either chocolates or small cakes...you could even fill it with water to make fun ice cubes.


I saw these plastic eggs at the store and normally, I might pass them by since most are just generic, solid color plastic eggs, but these were different.  Some lovely colors (different than the standard, yellow, dark green, etc) but the colors weren't the only thing that caught my eye...the beautiful decorations on them did as well.  Almost a Middle Eastern or maybe Spanish influence to them.  Too cool to pass up.


And sure enough, when put in one of our apothecary jars, they look amazing for Easter decor!


And lastly, these are some Easter themed (more or less, ha) dish towels we found and they are fun.  The chicken one is a set of two, then there are carrots, of course for the Easter Bunny, right?


Here was our Easter dinner.  One of my favorites and it's healthy.  A lean cut of pork loin, roasted with Herbs de Provence, baked mashed sweet potatoes with garlic and a side of peas.  Oh, and a glass of pinot grigio.

It was a great weekend and we hope you all had a great Easter weekend as well!

GOOD FOOD AND HOBART EASTER SUNDAY

Happy Sunday and Happy Easter.  Will have a post tomorrow with the Easter stuff because today we are having our herbs de Provence pork loin roast for our Easter dinner...but it's cooking now, so no pics yet, ha.

So, here's a healthy "breakfast for dinner"...


Egg white omelet with grilled veggies (mushrooms, spinach, tomatoes, peppers, fat free cheddar), topped with avocado and whole wheat muffins and fresh fruit on the side!  Healthy food is good!


Here is Hobart, doing what he does best on Easter, laying in his chair, in his spot, on his Afghan soaking up the sunshine and recharging his solar batteries or something.  We allow it.  Because...

IT WAS A GOOD FRIDAY OF ZEN TIME

We were both off yesterday so it was a good day to head to the farm and do some things out there and then have the rest of the weekend for relaxing and a little planning, which is what we are doing today and tomorrow!


It was a GORGEOUS day.  Cool, breezy and mostly clear.  Time to hop on Zen Machine 2.


Almost an hour and a half, I skipped some of the farther trails because it was still a bit wet in some spots and I was NOT going to get stuck...been there, done that...three times, ha.


When it was done, it was beautiful as always.  Such a relief to see it neat and tidy.  We moved some stuff around in the house and 2nd Man inventoried some of his kitchen stuff while I did a few things in the yard.


I took the truck for a spin and parked it and that was about it for the day.  We headed back into town.

Quality time on the Zen Machine and both of us together at the farm is always...


...a good day!

BIRTHDAYS ARE FUN

 Between 2nd Man, coworkers and friends, I had a good birthday week.


The inside of the card is at the end of this post.


I love getting useful stuff.  Of course a new bag to carry stuff to the farm or in and out at work and that would be a Buc-ees bag (it's a Texas institution, ha).  The chicken is a night light that has an egg that lights up.  This stand device is for when I'm filling bags for the freezer prep I often do, it holds the bags open.  Silicone spoon/spatulas for getting the last bit out of jar,  Really cool.  And then something I had always wanted, herb scissors (with cleaning tools) so you can cut/mince herbs quickly and easily.


Looks like I have a head start on a farm truck for the 4th of July decorations, ha.  The other one is a shiny galvanized metal truck.


How about two bee hotels??  Too cool.  These will be really fun to try and see if we get some bees (these are for bumblebees, solitary bees, carpenter bees, not honey bees).  I've always wanted to try this project.


And here is the inside of the card, my coworkers wanted ti to be a celebration of me having my birthday after the end of the year's unfortunate event, ha.  Very sweet and they all wrote very nice things for me.

WHITE VELVET CAKE RECIPE

Thank you all for the sweet birthday comments from yesterday.  It was a good day, coworkers treated me well and so did 2nd Man, ha!

Recently, 2nd Man made his own birthday cake.  Now, before you feel bad, he asked me not to buy one or make one, he wanted to try something new.  Several of you asked for the recipe & that's why we did this post.

The recipe is from King Arthur Flour.

It's called a "White Velvet" cake and yes, it's a 'cousin' of Red Velvet cake. Same texture and method, only no cocoa and of course, no bottle of red food coloring, ha.

Ingredients:

  • 3 cups (360g) all purpose flour
  • 1/4 cup (28g) cornstarch
  • 1 3/4 cups (347g) granulated sugar
  • 1 teaspoon table salt
  • 2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1/2 tsp lemon juice powder (or 1TBSP lemon juice)
  • 12 tablespoons (170g) unsalted butter, at room temperature; cut into 1” pieces
  • 5 large egg whites (175g), at room temperature
  • 1 1/4 cups (284g) buttermilk, at room temperature
  • 1/2 cup (99g) vegetable oil
  • 1 tablespoon (14g) pure vanilla extract
  • 1 teaspoon almond extract
  • 1 teaspoon white vinegar

The steps are a bit more involved to post here, so again, click the link at the top to get all the details on how to mix everything together. 

The batter, once divided, will fill two 8" round cake pans and then you bake them for 35 to 40 minutes.

Now, he made his own frosting using mascarpone cheese and then he created a vanilla pastry cream filling for the layer in between.  You could use a traditional cream cheese frosting or if you like buttercream or whipped etc, use whatever you like.  The filling in between layers you could use (as is normal) whatever frosting you have for the outside, but 2nd Man wanted it to be different and more vanilla forward in taste, hence the pastry cream.

It was delicious!

But we only had one slice each because, it's all about moderation now...and my office reaped the reward of the leftover cake (to rave reviews!).

1ST MAN HAS A BIRTHDAY

 2nd Man here to hijack the blog and wish my husband a most wonderful birthday!


I'm not as verbose as he is and sometimes not sure what to write, so I will just say that I am happy (and I'm sure all of you feel the same as well) that he is here to celebrate another trip around the sun.

LE CREUSET FACTORY TO TABLE ADVENTURE

We had a blast on our "there and back" day trip (see Fri/Sat posts).  These were all amazing deals, the biggest piece was 75% off.  It was retail $625.  That means we paid $156 for it.  Deal!  Most were 50% or 60% off.  We've known this trip was coming, so we've been saving up to get the pieces we've wanted to add to our growing collection.


We got there about 45 minutes before they opened the doors and there were already several dozen people in line.  By the time we started moving in, there were a few hundred in line.  Fortunately, it was large.

In order to keep crowd size controllable, when you bought tickets, you got them for certain time windows.  We got the first of the day, because later in the day, there may be things they run out of. 


Lots of tables set up and you just roamed around to get what you wanted.  They had wonderful employees standing everywhere (in bright orange shirts, ha) and you could ask for a specific color, a certain piece, even "what is the best deal in here" and they would direct you right to it.


40%, 50%, 60%, even some bigger bargains.  These are all factory new, not seconds or defects.

That's why the call it Factory to Table!


They even had bakeware and ceramics, also spatulas and other accessories.  We were just there for the enameled cast iron.

So here is what we picked up.
Yep...seven pieces.


This was a cool piece because it's usually only sold overseas.  It's called a Parisian Bistro Pan.  It has wide handles and a flared edge at the top.  The color is a color not available here, "vapor", kind of a blue gray. 


2nd Man wanted a new pan for cooking his corn tortillas on (a comal) and this looked like a good one to call our own.  It is also in a hard to find color, this one is called "emerald" it goes from dark to lighter.


We also wanted a casserole type dish and this one is 3 quarts, the perfect size for casseroles and side dishes.  It's called the signature oval baker and in a color we don't already have, "Marseille" (a bright blue).


Two classic pieces, round dutch ovens.  The large one is 14 quarts and "cerise" (cherry red) and the other is 9 quarts and orange or "flame".  We already have a 6 quart (black) but found it a bit small for large batches of soups or stews.


Here's a neat one that we had been curious about and with us eating more brown rice now, figured it will be perfect.  It's a rice pot, cast iron but with an inner ceramic lid.  This color is "turquoise".


Lastly, this is a piece we have been wanting for a while now.  A tagine, a Moroccan cooking method/pot.  You layer the ingredients in the bottom and the tight fitting lid and unique shape, lets the steam rise up and rain back down on the food to add moisture and flavor.


The upper portion is ceramic but the base is their signature cast iron with a matte finish to help prevent sticking.  This color is called "volcanic" (kind of a variation on the "flame" color).  We have a clay tagine that we used to use a few years back, but it does not work on our induction stove of course, so this will be fun to have and get back into cooking with a tagine.  He's already looking at new recipes.

 I told 2nd Man that we are going to have to put in our will that we leave our collection to a cooking school, ha!
