Here it is, the week after Thanksgiving. Where is the year going? It's been a warm weekend, we almost broke a high temp record. It was also overcast with the threat of rain. Anyway, it's Sunday now and time for some more good food and some Hobart.

2nd Man made some meatloaf. I love his meatloaf, it's loaded with finely minced carrots, mushrooms, green bell pepper, onions and celery. We laugh and say it's half vegetable and half meat, ha. I made some lemon pepper baby broccoli (though I think these were more like teenaged broccoli, ha).
A glass of wine and some chocolate pudding for dessert and it was a good meal.

Hobart was sleeping in his usual spot (with a view) and when I turned around, he was just sitting there looking at me. I couldn't resist capturing it. He wasn't feeling good for a couple of days, but he's back to himself now. We have to remind ourselves that he's 16 now (he just had his birthday a few days ago) but as we said, he's back to himself, being our sleepy but silly kitty.

I LOVE meatloaf and put a good number of veggies in mine too. It just makes it so moist and flavorful. Chocolate pudding is the way to my heart.

I know some people don't seem to like it but we love it. Heck, for kids it's a great way to "hide" their vegetables, ha. Thanks and happy belated birthday to Jet! It is hard to remember how old they really are when they seem to act like kittens so much. That's why when he wasn't feeling well, we were worried. But he's his old self now, maybe just had an upset tummy or something. But it's a reminder we need to keep an eye out for changes.
DeleteI put lots of bell pepper and onions in my meat loaf, but never carrots. I think I will put some of those in next time, and maybe celery. I do put tomato paste in my meatloaf.

Thank you, Hobart appreciates the wishes, ha. Yes I should have put that we have some tomato pasted in there too (and of course ketchup on top). 2nd Man uses this mini chopper he has to get a really fine dice on the carrots. Almost minced. All the veggies he does like that so they are so small as to not be so obvious in the meatloaf. Then he sautés them down so they don't put so much moisture into the meat mixture.
DeleteI love meatloaf too. 2nd Man’s looks so delicious. I put vegetables in mine also but not as many as y’all’s - but after seeing these additional veggies, I’m going to starting adding them.

DeleteYep, he minces them and then sort of "dries them" by sautéing them in a skillet and then adds it to meat mixture. It gets rid of a lot of moisture and they almost melt into the meat. Some onion soup mix, eggs, breadcrumbs, milk, etc. So good.
DeleteAs for the broccoli I got the lemon pepper at HEB they have it in a a grinder, you just turn it upside down, grind it and open the cap. I put a some butter in with it and the lemon pepper. It's a great combination.

DeleteNever thought about putting onion soup mix in meatloaf. I add lots of vegetables too but never have put in carrots. Next time. Maybe tomorrow.
ReplyDeleteWe tried it once and it was such a good addition of seasonings. The other veggies cook down so much so the carrots will too but you have to mince them really small. We've also shredded them before too. We use about 2 medium carrots.
