That was a pleasant reminder to use some of the rhubarb I froze last summer! Diet bedarned, I see rhubarb pie in my near future....like maybe today! Peanut butter toast for breakfast on Tuesday, coffee on Wednesday....sans the "Irish", but I'll be sure to yell "Begorrah!" occasionally while drinking it. Then I think I'll skip the remainder of the week's food celebration, as much as I would love some of that peanut brittle. The corn chips, though, would taste pretty good with some of my homemade salsa. Would corn tortilla chips count? ;-)
ReplyDeleteDo you know I've NEVER eaten Rhubarb? I wonder if it grows in this neck of the woods. It's a perennial, and if it's really good, it might be something fun to plant. I'm with ya on the peanut butter toast, i thought I was the only one that liked a piece of toast with just peanut butter on it. Yum! As for corn chips, yeah I think corn tortilla chips is ok. Of course, fritos with chili, cheese and onions would be yummy too!

ReplyDeleteI didn't get the rhubarb pie baked today. I got the butter thawed for the crust, but painting two doors and running all over town looking for tiles for my backsplash took up the afternoon. Maybe tomorrow....I say it still counts if I'm a day late with it, as long as I get it in the right week! Rhubarb is an acquired taste, I think. I need LOTS of sugar with it.
