GOOD FOOD AND HOBART SUNDAY

This has been a weekend to stay in.  Yesterday was sporadic rain on and off and today is more of the same.  But hey, we need the rain so it's all good.


This is not a pizza, as much as it looks like one.  It's more like a frittata.  2nd Man makes this often and we love it.  He takes some hash browns and presses them around in the bottom of an ovenproof skillet.  He cooks them in the oven for about 20 minutes.  Then he takes whatever we have in the fridge, in this case, mini bell peppers, sausage, onions, and mushrooms and sautés them.  Then he beats up some eggs and adds the sautéed mix to it and pours it over the hash browns.  Back in the oven until the eggs are cooked.
Easy and delicious.


And of course, here is Hobart.  We love this picture because the sun was lighting up these white/gray tufts that he has on the sides of his ears.  When he's just sitting there looking around you can't really see them but when the light hits them just right, they glow.
As always, we believe he is...

  1. That does look like pizza. Maybe I will try it. That is the best picture of Hobart. Usually, it is hard to make heads or tails of him, not that he has more than one head or tail.

    1. LOL I know what you mean. Sometimes he's sleeping and we aren't sure which end we're looking at when he's curled up, ha.

  3. I love 2nd Man’s dish! Looks really delicious and a great way to use up bits in the refrigerator. I usually cook bacon, then sauté onions, shallots, potatoes, mushrooms, then add eggs and cook in the skillet. But I really like 2nd Man’s crust of hash browns. I’ll have to do that next time.

    That’s a beautiful picture of Hobart. His little white angel wings are peeking out!

    1. Angle wings for sure. Yes, it's a great way to use up bits and pieces and the hash brown crust is great. We use the "Simply Potatoes" brand in the refrigerated section at the store. Press them in the bottom of a pan or casserole and bake at 350/375 for about 20 mins until the get some brown on them and then pour in the egg mixture and bake until that's done.

  4. I would say Chef 2nd Man created a tasty frittata ... he knows what that is! Ask him! LOL
    I love that not-spoiled-cat ... he is just beautiful!

    1. It's funny you said this, 2nd Man was reading and said "change that to frittata because that's what it is, a variation anyway. I told him that you mentioned that and he said great minds! ha. And thanks you, Hobart is a sweetie.

  5. That is almost like a breakfast pizza that I make.
    Bee having very nice rain showers off and on all day today. So far we have gotten just a little over an inch.

    1. Thanks! And glad for your rain. We've been the same way here. Rain then a break, rain, then a break. I think we're about 1 1/2 so far today. This week though looks like we could have some heavier rains later in the week.

    1. Aww, thanks for that. We still look at him and can't believe he's almost 17. He moves a bit stiffer at times but he still like to play and have fun.

  7. I'm so jealous of your rain! We've only gotten 0.8" for the whole month; I swear we live in a donut hole. The storm comes right up to the ranch and then splits and goes around. The frittata looks amazing by the way; props to 2nd man!

    1. We have to laugh about your donut hole comment. Out at the farm, the family that lives at he front of the property has always said there is a dome over the farm because the storms do the same thing most of the time, the line is coming there and then it breaks in half and goes around. Now this time we got lucky but honestly we have a donut hole/dome/bubble as well, ha. You'll get some soon, we'll do an extra rain dance for you. :-)
