MARGARITA GRILLED CHICKEN RECIPE

This is one of our favorite quick dishes in the summer to throw on the grill.
I got the recipe some time ago and have
tweaked it a bit over the years to suit our own taste.


MARGARITA GRILLED CHICKEN

1 can frozen Margarita mix, thawed
4 tbsp fresh squeezed lime juice
4 cloves of garlic, minced
2  tbsp tequila (optional)
2 tsp red chili flakes (can be omitted if you don't like the heat)
1 tsp kosher salt
1 tsp pepper
Green onions for garnish
4 boneless chicken breast halves (or chicken of your choice)

Combine all ingredients except chicken in a small bowl.  Pour most of the marinade into a large Ziploc bag, reserving some for later use as a baste (roughly 3/4 cup)

Add the chicken, seal, shake until well coated and let marinate for at about 2-6 hours in the refrigerator along with the reserved liquid.

Drain off the marinade, heat your grill to medium or broil 4" from the heat, and grill the chicken 4 to 7 minutes per side, or until a meat thermometer reads 160 degrees, basting frequently with the reserved liquid.  Serve on a plate, and garnish with chopped green onions.

  1. You know I am all about the margaritas!!! Might have to try this very soon. Just so you know, it is flipping HOT here. Heat index over 100 and oh, we don't have air conditioning!!!! Thinking of you.

  2. Over 100? No a/c? OK, during Hurricane Ike, well, after, when we had no power for 2 weeks, it was September and hotter than heck and we were without a/c and I seriously thought I would either die, or go insane, not sure which first, ha. Mainly because none of our windows (at the city house) open (years of painted shut) so there was not even a breeze at night. Get you a small window unit as a backup, at least in your bedroom so y'all can sleep at night.
