I haven't posted a recipe in awhile, too much going on with the house. So let's get back on track. After all, that's what this blog will ultimately be about, food, decorating, gardening, and living a more self sufficient lifestyle.
This is one of our favorite "quick" cookies. It's one that you may have seen before, as it's very popular and on numerous sites around the Internet but hey, I'll add our two cents to it as well. It's so impossibly easy, you might find yourself making them during the next TV commercial break. OK, maybe it takes just a bit longer than that, but not by much. It only uses three ingredients that you may already have in your pantry.
After just a few minutes in the oven, you have great tasting cookies!

Three Ingredient Peanut Butter Cookies |
INGREDIENTS:
1 cup peanut butter
1 cup white sugar
1 egg
Preheat oven to 350 degrees.
Mix all together and stir until smooth.
Mix all together and stir until smooth.
Drop by spoonfuls onto a parchment sheet lined baking sheet and slightly flatten each one with a fork in a standard peanut butter cookie pattern.
Bake in oven for 6-8 minutes (do NOT over bake).
They should be soft and slightly brown on the bottom. I realize every oven is different so just keep an eye on them starting at about 6 minutes.
After you remove them from the oven, it's best to let them rest for a bit.
"Wilderness", an awesome blog reader, reminded me that this is a great recipe for people with Gluten allergies and issues. No flour in this one! Thanks!
Enjoy!

ReplyDeleteThese sound wonderful! I think that I will make a batch today!
ReplyDeleteHow simple and great for folks looking for gluten free recipes.
ReplyDeleteBetter make them now if the thread of a peanut butter shortage is true the price is going to go out of sight.
I made these today and boy, are they good! Very quick and easy to make. Thanks for the recipe!
ReplyDelete@ Robin: Wow, thanks for the quick review. I love that you made them so fast. Glad you like them. They are just quick and easy and delicious and one of my favorite "comfort" snacks, ha.
ReplyDelete@ Wilderness: Yes, I totally forgot to mention that. I've edited my blog posting and gave you credit for the reminder! Thanks! Peanut butter shortage? Oh my, I hadn't heard that.
@ Bee Girl: Magical! I love that description. Hope you make them and hope you enjoy!
I have used this recipe for many years and I bake them at 375' for 7 minutes and they turn out perfect every time.
ReplyDeleteI might try the 375 next time. Thank you! And thanks for stopping by. Come back soon!
DeleteThis Rx is an old tried and true one! Using it for 20 years! Always good in a pinch when you need a small batch of PB cookies.
ReplyDeleteI've also tried this with Almond and Cashew Butter with great results too! Just needed a dab of vanilla to bring out the flavor.
It's definitely a classic. And YUM!!! Almond and Cashew butter? Holy cow I need to try that. Thank you for the suggestion and thanks for the comment. Hope to see you around again!
